It's cool that the stew was still really savoury despite the missing ingredients. I'm vegan and I rely on marmite and nutritional yeast a lot for that kind of hearty flavour (when I don't just use vegetarian 'beef'/'chicken' stocks). I wonder if the concentrated tomato did more heavy lifting, or the wine? It looks(/sounds?) really tasty, anyway!
