Grinding for Cooking: Week 1

Since I've been finding a lot of enthusiasm for cooking recently, I thought I might log my efforts: What went well, what didn't, what I'd do better next time. So for the first week of 2022, I made:

Ultimate Hearty Vegetarian Stew from Yup, It's Vegan! I made this dish as part of a "Tavern Night" date night with my partner -- I made the stew and fresh bread, and we got mead and cheese, lit the fireplace and every candle we could find, and watched Lord of the Rings. It was such a good New Years' celebration! I didn't have nutritional yeast, marmite, or liquid smoke, so I just left those out, but the overall dish was still great! I loved the acidity in the liquid, and there was a definite hearty smell I usually associate with more meat-based stews.

Easiest Loaf of Bread You'll Ever Make from King Arthur Baking. Also part of the Tavern Night, made on a last minute whim. I cut it really close to be done in time to watch Lord of the Rings, lmao. Overall, the crust was harder rather than crunchy, and not sure what I did wrong with that, but it was still an awesome bread to tear into hunks and shove in your mouth with large blocks of cheese. I only did this recipe because it was relatively quick, but I'd like to do something a little more porous next time.

Sengalese Peanut Stew from The Soup Club Cookbook. This was delightful, especially with some fresh rye bread (storebought this time, lol)! From the little blurb about the recipe, I don't know how authentic it is, and I think it could use a little more kick in the future, but it was delicious! Also a great starter, because the partner was kind of nervous about this soup, so starting tame was probably a good idea. She loved it too, though!

Miso Yaki Onigiri from Just One Cookbook. Just One Cookbook has never let me down. But serving this with miso salmon was too much miso on one plate, lol.

Whatever the texture problems, I'm impressed enough that your bread was edible. I'm hopeless with bread!

It's cool that the stew was still really savoury despite the missing ingredients. I'm vegan and I rely on marmite and nutritional yeast a lot for that kind of hearty flavour (when I don't just use vegetarian 'beef'/'chicken' stocks). I wonder if the concentrated tomato did more heavy lifting, or the wine? It looks(/sounds?) really tasty, anyway!
